RED VELVET VALENTINE’S DAY RECIPE
Makes: 9 Bars
1 Cup Oats
1/2 Cup Organic Coconut
1/2 Cup (a little more than one scoop) Chocolate Protein Powder (I used Vega One)
1/2 Cup Favorite Nut Milk (I used Almond)
1/4 Cup Coconut Oil
1/4 Cup Cacao Nibs or Dark Chocolate
5-10 Dates, soaked (I used 8)
3 Tablespoons Beetroot Powder (natural food coloring!)
Splash Vanilla (about 1/2 teaspoon)
Pinch Sea Salt
Step 1: Add oats and coconut to food processor and process into small pieces, until flour-like.
Step 2: Add protein powder, nut milk, coconut oil, dates, beetroot powder, vanilla, and sea salt and process until sticky and crumbly.
Step 3: Transfer mixture to a large bowl and fold in cacao nibs or dark chocolate.
Step 4: Line a 9×9 baking pan with parchment paper and press mixture into pan.
Step 5: Place in freezer to set for 10+ minutes.
Step 6: Remove from freezer, cut into 9 squares, and enjoy!
